This recipe was honed over my second winter of graduate school until I perfected the perfect ratio of all ingredients!
Ingredients (makes about 8 servings):
- 1 lb ground beef, cooked, drained
- 1 28 oz can crushed tomatoes
- 1 28 oz can petite diced tomatoes
- 1 15 oz can medium chili beans
- 1 15 oz can baby butter beans, rinsed
- 1 green pepper, diced
- 1 medium onion, diced
- 1 large garlic clove, minced
- 1 Tbsp chili powder (I used medium penzeys spice)
- 1 tsp cumin
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
Mix all ingredients together and cook on stovetop for 2 hours, in a crockpot on high for 4 hours, or on low for 8 hours. Enjoy!
